Sarah Abeka is a Registered Dietitian Nutritionist (RDN) and a Regulatory Officer in Gerontological Nutrition (CSG) department of the Food and Drugs Authority in Ghana. With experience in long term care, clinical nutrition, and bilingual outpatient counseling, Sarah helps meet the dietary needs of Ghana’s diverse population. Sarah is a skilled Nutritionist and Food Scientist with proven academic and practical understanding of Micro-biology, Nutritional Physiology, Nutrients and their Metabolism, Food Analysis, Sensory Science, Nutrient Interrelationship and needs, and Thermal Processing to mention a few. She also has strong sensory analytic and research experience.

This study aims to explore the knowledge gaps between what students are taught and how they apply this knowledge in industry.
